El Maizal

At Maizal we grind maize to create pure, home-made tortillas The food we make reflects our respect and passion for Mexico's gastronomic and agronomic knowledge and traditions. Maizal is Spanish for 'plot of corn'. The maize we use is heirloom and sustainably grown in the vicinity by small-scale growers. Whenever possible, we acquire chiles, epazote, tomatillos, meats, and other ingredients from partners who farm locally and ecologically.
